TASTING NOTES
Defaix craft some exceptional Chablis and this is one of our all-time favourites. In a different league to most village Chablis, this is closer to a very good Puligny-Montrachet, with a deal of extra age on it and plenty of complexity. Stunning wine for the money. If you think you know Chablis, think again.
PRODUCER NOTES
Daniel-Etienne Defaix is a man that is committed to producing ‘vins de terroir’ – wines that speak of where they come from. Fortuitously for us the Defaix estate constitutes 25ha of prime Chablis landholdings, with vines in numerous 1er and Grands cru sites.
His wines are made in a traditional style – without the use of new oak, but with significant time spent ‘on the lees’ (the skins, yeasts and other such physical matter of the grapes). This infuses all of his wines with phenomenal richness and complexity, while retaining the hallmark freshness and minerality of great Chablis.
