TASTING NOTES

Once again, Defaix have produced a fantastic wine from an exceptional Premier Cru vineyard. This has got to be one of the best value white Burgundies we do, standing comparison with some of the best of Puligny and Chassagne.

PRODUCER NOTES

Daniel-Etienne Defaix is a man that is committed to producing ‘vins de terroir’ – wines that speak of where they come from. Fortuitously for us the Defaix estate constitutes 25ha of prime Chablis landholdings, with vines in numerous 1er and Grands cru sites.

His wines are made in a traditional style – without the use of new oak, but with significant time spent ‘on the lees’ (the skins, yeasts and other such physical matter of the grapes). This infuses all of his wines with phenomenal richness and complexity, while retaining the hallmark freshness and minerality of great Chablis.
