Domaine Cotat is a shining example of old-school winemaking from one of the most prestigious names in Sancerre. Not much seems to have changed here in years, everything is done by the family on site, the presses are old and made of wood and wine is not filtered or otherwise messed about with. The result is outstanding Sancerre and there doesn’t seem to be any need to change that.
