Natural wine is one of the most exciting recent developments in the wine world. It is really a reaction to the last fifty years, which have seen winemaking technology increasingly used to bring consistency, sometimes at the expense of character. Natural winemakers aim to produce wine with as little interference in the natural process as possible, using organically grown grapes, wild yeasts and fewer added chemicals (such as sulphur). Everyone has a different take on exactly how ‘natural’ wine should get, and deciding where to draw the line is a fine art. Those who judge it best produce fresh, flavoursome wines which have a purity unmatched in conventional winemaking.
