TASTING NOTES
For years, we've been scouring the world for the best region to grow Chardonnay outside Burgundy, but who knew it would turn out to be so close to the Holy Land itself? The Jura and its mountainous landscape are a mere 100km away from Burgundy and Jean Francois Ganevat trained in Burgundy where he worked for Jean-Marc Morey before returning to the family domaine in 1998. He brought back with him the Burgundian winemaking philosophy and vinifies all of his scattered parcels separately, respecting the primacy of terroir. Recently he moved towards biodynamic methods in the vineyards and now works without any sulphur for his reds and only a tiny amount for the whites. The main difference with Burgundy (apart from the terroir, obviously) is that in the Jura they use an old clone of Chardonnay that has been abandoned everywhere else because it gives very small yields. Cuvée Florine is a stunning beauty of a wine. Shy at first, almost reminiscent of a Grand Cru Chablis with its tightness and expressive stony minerality, it slowly unfolds with aeration to show its flesh and pedigree. The palate becomes fuller and silkier with riper notes of acacia and white peaches, but without losing its mineral edge, and it finishes on a slightly salty, almost savoury note. This was the wine of the evening at our last natural wine walkabout. Outstanding!'
