WINES FROM DOMAINE L'ESCARPOLETTE

Ivo Ferreira from Domaine L'Escarpolette spent years as a sommelier in Paris, working at some of the most prestigious restaurants in the city (including Violon d’Ingres and Le Meurice). It was during this time that he became increasingly interested in natural wines, so he went to work the harvest with Jean-Marc Brignot in the Jura and enjoyed it so much that he decided to embark on a career as a winemaker.

His recipe is simple: organic viticulture, low yields, hand harvesting, spontaneous fermentations with natural yeasts, no additions or manipulations during vinification, elevage in large old barrels, no fining or filtration and bottling sans souffre if possible or under only a small dose of SO2.
