Henri Boillot is undoubtedly one of the most highly respected names in modern Burgundian winemaking.
He has combined the difficulty of maintaining and improving the reputation of a family domaine that has been present in the Côte de Beaune since 1855, with a business head required to consistently turn out wines considered to be among Burgundy’s very best.
Henri is an absolute perfectionist who will stop at nothing to produce wines that combine hedonism with elegance. The fruit passes the sorting table twice on arrival at the winery to ensure only the best bunches make it through before they are crushed at low pressure to avoid the extraction of any bitter tannins.
Generic wines see 10% new oak, village wines 25%, Premier Crus 60% and the Grands Crus 100%. His attention to detail is evident in complex wines that focus on sensory pleasure but also deliver on terroir definition.
