PRODUCER NOTES
Wine was first made at Castell d'Encus, high up in the Pyrenees and surrounded by heavy woodland, centuries ago by monks who carved cisterns for fermentation out of the rocks. Despite the monks leaving in the late 18th century, these remain in very good condition.
