This crisp, food-friendly white is crafted using fruit from a single vineyard in Upperton, West Sussex, renowned for producing some of the best Bacchus grapes in the UK. Surrounded by vines designated for traditional method sparkling wines, our Bacchus grapes benefit from the meticulous care and precise canopy management that this vineyard is praised for.
Once harvested, we press the whole bunches and ferment them in stainless steel tanks. Using three different yeast cultures, we guide the fermentation process carefully to achieve the perfect blend. We keep the malolactic fermentation partial to naturally soften the crispness and add body.
Expect lively lime, gooseberry, pithy yellow grapefruit, and grassy, tropical undertones. The palate is pure and refreshing, hinting at green apple and elderflower. It's a perfect companion for any dish accentuated with a squeeze of lemon or lime, including oysters, scallops, or Vietnamese cuisine.
