Crafted from 100% Chardonnay grapes sourced from a single vineyard in West Sussex, this Blanc de Blancs is a standout English Sparkling Wine. The hand-harvested grapes were whole bunch pressed and underwent primary fermentation in temperature-controlled stainless tanks and neutral French oak barrels. After a full malolactic fermentation to add a creamy texture, the wine was aged on lees for six months. The secondary fermentation was conducted by gravity in our Fulham winery, and the wine was allowed extended lees bottle ageing for almost three years before being disgorged and dosed in January 2023.
HOW IT TASTES
With its fine bubbles and vibrant fruitiness, this wine brings forth lively notes of cooked pear, red apple, and a touch of caramel. Balanced by candied lemon peel and greener apple, the result is an elegant and refreshing experience. Perfect for any occasion, it pairs brilliantly with grilled local seafood, zesty ceviche, or a sweet baked pear tart.
