The Basque Country in Spain must be the best place on earth if you’re a fan of fresh fish and light, fresh white wines. The wine you’ll find on every wine list here is Txakoli, pronounced ‘cha-ko-lee’. It’s made from the local grape variety ‘Hondarrabi Zuri’ and produces wines low in alcohol, with the signature spritz on the palate. Bodegas Ameztoi, who’s picture postcard vineyards overlook the Bay of Biscay, farm steep terraced slopes that can only be harvested by hand.
