Inniskillin pioneered the production of Icewine in Canada. To make Icewine, the grapes have to be harvested and pressed when the grapes are naturally frozen, meaning the winery has to wait until temperatures drop below freezing at night. This means only the sweet sugar is pressed out, making the one of the most luscious dessert wines we have ever tasted.
