Beaujolais from one of the ten named crus of the region, Chiroubles. Ample primary aromas of red cherry and blackberries at first visit and then over time the acidity seems to integrate and an almost savoury character develops.
Initially juicy cherry and blackberry notes dominate, developing into a savoury finish with a delicate tannin structure.
Pauline Passot starts all her wines in the same way. Whole bunches undergo semi-carbonic maceration, using indigenous yeast only and sulphur dioxide is only added at the last stage, just at bottling.

Jean Claude Lapalu is one of a handful of organically certified producers in Beaujolais. Brouilly is one of the famous 10 'Crus' of the region, and the vines harvested for this 'Cuvée des Fous' are over 100 years old. Uniquely for Beaujolais, it is bottled in a Bordeaux bottle due to an amusing conversation about selling bordeaux in 2000. The wine was incredibly popular, and the bottle shape stuck!
