A classic Cabernet led blend from Lower East Washington State that displays all the typical characteristics of the New world style. Blackcurrant, black cherry and plum are accompanied by aromas of dark chocolate, rose hip, vanilla bean, dried herbs and pepper. The wine is elegant rather than powerful and acidity remains high due to use of high elevation vineyards. Look for foods high in fat and umami flavours to pair with.
