The historic region of Tokaji in Hungary is predominantly famous for its unctuous sweet wines. These sweet wines are graded by 'Puttonyos' 3 being the lowest and 6 being the highest. Any region producing sweet wines will undoubtedly use Tokaji as a benchmark, which can date back their vineyard plantings to 1730. The sweet wines are made from botrytis affected grapes, similar to Sauternes, a noble rot that reduces the water content in the grape, leaving just the sweet, sticky sugars to ferment.
