
Merlot is grown all over the world, but is most famous as one of the crucial elements in Bordeaux, especially on the right bank where it suits the soil. The fact that it is easier to ripen than either Cabernet Sauvignon or Cabernet Franc made it a popular insurance policy there in the past. So successful has the pairing been that a high proportion of Merlot is still blended with Cabernet Sauvignon wherever it is found. Its sweetness and freshness lends a certain upfront fruit flavour to these blends which softens any harshness in the Cabernet.
