Assyrtiko is one of Greece’s most famous, indigenous grape varieties. Although grown across the country, perhaps its best loved expression can be found on the volcanic island of Santorini. Here, vineyards have distinctive, black volcanic soils that give the wines their unique mineral quality. Their coastal location also exposes the vines to strong winds. In an effort to prevent damage to the vines, they are trained into a unique basket shape. The fruit grows within the basket, which acts like a protective cocoon as the fruit grows. Assyrtiko thrives in these harsh conditions, and the resulting wines from Santorini are often compared to top Chablis.
