Sémillon is an underrated white grape variety which is capable of producing fine wine, both dry and sweet. In Bordeaux of course, it is responsible for some of the finest whites in the world, being the predominant ingredient in top-quality Sauternes and the dry whites of Graves. Nevertheless, outside that region it has proved stubbornly unpopular. When made well, it is full-bodied, waxy, with a lemony, herby flavour and can age exceptionally well in the bottle. It is frequently blended with Sauvignon Blanc, the intensity and acidity of that variety counterbalancing the fleshiness of Sémillon.
