Domaine Etienne Delarche

Domaine Etienne Delarche can be found in the tiny village of Pernand Vergelesses where Etienne Delarche farms holdings totalling 22 acres of Côte de Beaune. The family cellar lies in the shadow of the famed hill of Corton. Vines are organic and sustainably farmed following a simple natural philosophy –- though they have yet to be certified. All grapes are hand harvested. Indigenous yeast is used. 

Pinot Noir for the reds is destemmed and fermented utilising indigenous yeasts in temperature controlled stainless steel vats. Wines may be aged for 12-15 months in French oak with no more than 30% new wood. 

Chardonnay is also destemmed and delicately pressed. Juice is fermented with the aid of indigenous yeast and older French barrels are used for this purpose with the exception of their Corton Charlemagne which is both aged and fermented in new French oak. None of the wines are fined nor filtered.
