Read moreThe grapes? Mostly single clone Pinot Noir Précoce, accented with a touch of Burgundian clones. The winemaking goal? To create an irresistibly pretty Pinot that's light, cool climate, and elegantly low extraction.
The winemaking process brings this vision to life. We use 80% whole bunch and 20% destemmed grapes for carbonic maceration in concrete tanks. To maintain our signature light style, we practice minimal pump overs and early pressing, with fermentation completed in concrete. Post fermentation, the wine ages in new oak (12%), neutral oak (8%), and a majority in concrete tanks (80%). It undergoes malolactic fermentation and then ages on lees for seven months before bottling.
Expect an explosion of wild strawberries, brambly red fruits, and floral notes. Crunchy cranberry, raspberries, and a touch of smoky tannin on the palate.
Pair with charcuterie under the sun or other favourites like grilled aubergine, salty cheeses, fatty fish like salmon and tuna, or meats such as duck, pork, and venison. Serve lightly chilled on a summers day.
