Fermentation in large cement vats and lees ageing for 14 months reveals a luscious and complex character. Light in colour with green hues, aromas of fresh lime, green apple, apricot, and a hint of dried herbs. The distinctive minerality of Santorini’s Assyrtiko makes a perfect match with oysters, sushi, ceviche and fatty fish such as salmon and tuna.
