Sweet White Wines

Wines for a sweeter tooth. There are several ways to make a sweet wine, and each has its own famous example. Some choose to leave their grapes on the vine until they naturally raisin, concentrating the fruit. Sweet Rieslings are commonly made this way. Some encourage Noble Rot, which also dehydrates the grape and creates an intense, naturally sweet wine such as in Sauternes. Some will add more alcohol to halt fermentation and create a sweet, fortified wine such as Port. You can even let the grapes freeze in the winter cold, pressing them whilst frozen and fermenting the syrupy juice into Ice Wine. There are so many wonderful possibilities, and the results are perfect to pair with desserts, cheese and even spicy food.
